Bhopal. A four-day food festival has been organized at Jahanuma Palace in the capital Bhopal. In this, food is being prepared using the 300-year-old Dampukht technique of Awadh. Chef Anjum from Lucknow has prepared these flavours. Rivayat-e-Dampukht Food Festival has started on 27 June at Shahnama Restaurant of Jahanuma Palace. Here you will find both veg and non-veg food prepared with Awadh’s taste and technique. The festival starts at 7:30 pm and continues till 11 pm. In which you will be welcomed in a very beautiful manner. Here you will get Lucknow style three course meal. Which includes starter, dinner and dessert.

Dum Pukht Bhindi and Tomato flavour
This festival has both veg and non-veg dishes. Which have been prepared using the Dum Pukht technique. Chef Anjum said that non-veg Dum Pukht has been around for many years. But preparing it in veg was a challenge for him. In this festival, Anjum has prepared vegetables like bhindi, tomato, chole, gourd etc. using the Dum Pukht technique. Which people are liking a lot. Also, there are many options for veg biryani. Chole biryani, soya nuggets biryani, jackfruit biryani are also included.

Tadka of Lucknow’s flavour
Chef Anjum Khandani from Lucknow is the chef of this festival. Dishes include traditional food made since the Mughal era like Galouti Kabab, Dum Biryani, Shir Khurma, Kakori Kabab, Shahi Tukda, Dum Gosht, Shirmal, Lagan Ka Murgh, etc. Along with this, there are many options in veg as well. These include dishes like Achari Paneer, Dum Bhindi, Dum Tomato, Paneer Korma, Soya Kabab, Chole Biryani, etc.

During the Mughal period, meat was cooked for a long time to melt it so that it could be easily digested. Anjum has also prepared dishes using this technique. This technique takes a lot of time to cook food, but the taste of the food increases. A different type of utensil is used to cook Dum Pukht.
